These chocolate squares are delicious, and SO simple to make.  Trust me – I don’t do complicated (at least not where the oven is concerned).

Photos in this post were taken with my iPhone, by the way, and the first one was taken in the evening, so they don’t actually have that yellowy tinge off them.

Dulce de leche cake

This cake is heaven on a plate.  I made it for the first time at the weekend after discovering it in Rachel Allen’s ‘Cake’ and it was absolutely delicious.  It’s very sweet and quite filling, so a little will go a long way.

Baking and Tagging!


Someone better explain to me what Tagging is. Apparantly, Magnumlady has done it over on her blog, and if it’s good enough for Magnumlady, it’s good enough for me! 🙂

Baking, on the other hand, is something I’m starting to get the hang of….sometimes…..depending on what I’m trying to make.

I found three large tins of pineapple chunks in the cupboard last week and thought I’d better use them up. So I came up with my own version of a Pineapple and Cherry Upside Down Pudding. One is supposed to use pineapple circles when making this, but the chunks worked very well and the pudding went down a treat!

As per usual, please excuse the lousy photography. Maybe when ML has finished with her tagging, she might visit one day and take some photos for me, or give me a few lessons.

Apart from baking (also made home made cookies, fairy buns and a chocolate cake), I haven’t really done much this weekend.

I had a birthday party on Saturday, which was great fun. It was a girls’ night out to celebrate the birthday of one of the girls in the Theatre Guild. We had dinner in Befani’s in Sarsfield Street, which was divine!! I had a rare sirloin steak which was done to a T (lol)! Then, it was onto Mulcahy’s which was fairly buzzing, and from there onto The Posthouse which was lively enough but unfortunately filled with moronic young lads who thought they’d nothing better to do only annoy the living daylights out of us.

The girls were away for the weekend and are due back today, and Jay is out finishing the foundation for the new shed that should be arriving this week. I’m just taking it easy for the morning as I’ll be “busy” later on.

Roxy is out in the garden at the moment with Jay. She loves any excuse to go out and play with the shovel. We bought her a new bed at the weekend, in Glenconnor Garden Centre, as all she’d had before that was an old mat. She was delighted with it and jumped into it the minute I brought it into the kitchen.
